Description:Want to turn your love of food and cooking into some serious culinary skills? Confederation College’s Culinary Management two-year diploma program is known worldwide for one simple reason: because our chefs travel worldwide. They work in some of the best restaurants and hotels in Toronto, Vancouver, Paris, Hong Kong, New York, Rio de Janeiro, Rome, and just about every major city around the globe. Some become entrepreneurs themselves, opening their own restaurants in Thunder Bay and beyond.

You’ll learn the basics of food preparation, taking your natural talent for cooking and turning it into a useable skill in courses covering basic and advanced culinary skills, restaurant cooking, dining room service, butchery and garde manger, hospitality marketing and sales, wine and international cuisine and menu planning and design. This program also goes beyond the chopping board to cover other important aspects of the business including kitchen and restaurant management, cost control, finances and legal considerations to give you a rounded education in hospitality.

Admission Requirements


These courses are intended as guidelines. Speak to your guidance counsellor to see what courses are offered at your school.

  •  Grade12 English 

Applicants are required to have an Ontario Secondary School Diploma (or equivalent) with courses from the College (C), University (U), University/College (U/C), or Open (O) preparation levels with Grade 12 English (C/U) Level; or successful completion of the Mature Student Assessment; or successful completion of the General Education Development Test (GED); or appropriate credits from the Academic and Career Entrance program (ACE). Applicants are also recommended to have Grade 11 College Preparation Mathematics. If you do not meet these admission requirements, we encourage you to consider the College Access or General Arts and Science Certificate or General Arts and Science Diploma, or Academic and Career Entrance program (ACE); if you successfully complete one of these programs, you will be eligible to apply to programs in the Business, Hospitality & Tourism and Media Arts areas.

  • Test of English as a Foreign Language (Internet Based) [min. 79] or International English Language Testing System (academic or immigration) [min. 6.0]

Proof of English proficiency must be current (within two years) and can be provided by either an iBT TOEFL or IELTS score. The minimum score for admittance to a post-secondary diploma program (except health programs) is iBT TOEFL: 79 or IELTS: 6.0. Other English language proficiency assessments are accepted.
